In 2006, the Altomare brothers returned to Hudson, Ohio, a place they once called home, to embark on a dream they always held of once again working together alongside their father. Their dream became a reality in October of 2006 when the doors of Hudson’s Restaurant opened for the first time, creating a new Hudson landmark. Their hope is that one day history may repeat itself by J.J. and Kevin’s children, washing dishes on a milk crate – just the way they got started in the family business.

John Altomare

John J Altomare is restaurant industry veteran with a long career history of success. John presently enjoys consulting at various levels within the restaurant industry. He also owns and operates a restaurant company with his two sons who both graduated from the Culinary Institute of America and are young protégés.

John J Altomare is restaurant industry veteran with a long career history of success. John presently enjoys consulting at various levels within the restaurant industry. He also owns and operates a restaurant company with his two sons who both graduated from the Culinary Institute of America and are young protégés.
Altomare was the senior vice president of concept development for Darden Restaurants Inc. He worked on the Red Lobster brand, overseeing innovations in the menu and in restaurant operations, design, service and technology. Altomare was responsible for all culinary research and development and operations development at Red Lobster. Altomare also leaded the development of the new “Coastal Home” design being used at all new and remodeled restaurants across North America. Altomare was the recipient of a national award for the new nationally recognized kid’s menu.
Altomare’s career has been hallmarked by restaurant operations expertise and culinary and concept innovation. He started his restaurant career in 1979 and distinguished himself in various leadership roles with Ground Round Restaurants and Chi Chi’s Mexican Restaurants. During his eight years at Chi Chi’s, he helped the company grow from 38 restaurants in the Midwest to more than 200.
In 1992, Altomare became a partner in the start up of P&L Food Services, a Boston Market franchisee. As president he developed and operated 114 Boston Market restaurants in the Northeastern United States. While there, he developed new menu items – including meatloaf and the Carver Sandwich product line – that were then introduced system-wide to more than 1,000 locations. Later Altomare became executive vice president of concept development for Boston Chicken, where he implemented the evolution of the Boston Market concept and expanded the menu to include grilled chicken dishes, made-to-order salads and a line of high quality desserts.
Altomare is an ambassador of The Culinary Institute of American, and also serves on the Kent State University Hospitality advisory board. He is currently an officer on the board for The Merchants of Hudson.

Chef “J.J.” attributes his passion for the culinary industry to his youngest years spent helping out in his father’s restaurants. Named after his father and grandfather – J.J. always had a feeling he would follow in their footsteps.
In a true family affair, J.J. attended the Culinary Institute of America in Hyde Park, New York with his brother Kevin. During his studies, J.J. interned at Primo in the JW Marriott, Grande Lakes Resort, training with Melissa Kelly – the 1999 James Beard award-winning chef. Under Kelly, J.J. developed an enthusiasm and appreciation for using organic and locally-grown produce.
Following graduation, J.J. explored his creative side at a new hotel concept where he prepared high-end, nutritious and delicious food for children and adults.

Chef Kevin got his start in the culinary industry at an early age, standing on milk crates to wash dishes in his father’s restaurants. Ultimately, Kevin decided to pursue his passion and attend the Culinary Institute of America in Hyde Park, New York. He graduated in April 2005 alongside his brother “J.J.”. Their father, John Altomare, delivered the commencement speech. During his studies, Kevin interned at The Ritz-Carlton, Grande Lakes.
Kevin spent time at K-Paul’s Louisiana Kitchen in New Orleans and worked under famed Chef Paul Prudhomme and Chef Paul Miller. He left K-Paul’s just a month before Hurricane Katrina devastated much of New Orleans. Kevin then became a manager at a prominent seafood restaurant.
